Pop's Decadent Fish Casserole

Note: This recipe is amazing on white bass (sandies), crappie and bluegill!


Ingredients:

* fish (white bass, crappie, bluegill, etc.)
* mayonnaise
* green onion
* garlic powder
* Tony's Creole Seasoning
* butter
* black pepper
* crushed red pepper
* grated parmesan cheese

Step 1 - Preheat the oven and set on Hi Broil.

Step 2 - Coat a couple of baking dishes with Pam or some other cooking spray. Arrange the fish so that no pieces are overlapped (this helps in even cooking). Put under the broiler for 5 to 10 minutes. The meat should flake easily with a fork when done. {NOTE: if using white bass/striped bass... be sure to cut out the red meat as most folks don't like the taste of it}

Step 3 - Prepare the sauce. Combine all remaining ingredients in a bowl to taste. Start off small with each item and build up to what you like as far as taste. Put in refrigerator until ready to spread on fish. {NOTE: If you love fish tacos, this sauce makes an awesome spread to put on them!!}

Step 4 - Take the fish out of the oven when the meat flakes easily. Drain any juice that may be in the pan of one of the cooking dishes. Combine fish into one baking dish and liberally coat with the sauce. Try to keep from turning the fish as much as possible as they will break apart. Put back under the broiler until the sauce starts to turn golden brown.

Step 5 - Take baking dish out and coat the casserole with crushed up Ritz crackers and shredded cheese. Put back under the broiler until cheese turns and nice golden brown.

Take casserole out and allow to cool for about 10 mins (if you can wait that long!!). Plate it up and serve with your favorite side dishes!!
